Ingredients:

500g crab meat (fresh or canned, drained)
1 tablespoon ginger-garlic paste
1 tablespoon soy sauce
1 tablespoon red chili sauce
1 tablespoon vinegar
1/2 teaspoon black pepper powder
Salt to taste
2 eggs
4 tablespoons cornflour
4 tablespoons all-purpose flour
1 teaspoon baking powder
1/2 teaspoon red chili powder (optional)
2 green chilies, finely chopped
2 tablespoons chopped coriander leaves
Oil for deep frying
Wooden skewers or lollipop sticks

For the Sauce:

2 tablespoons ketchup
1 tablespoon soy sauce
1 tablespoon red chili sauce
1 teaspoon vinegar
1 teaspoon sugar
1/2 teaspoon black pepper powder
1 teaspoon cornflour (mixed with 2 tablespoons water)
1 tablespoon oil
1 teaspoon chopped garlic
1 teaspoon chopped ginger
Spring onions, chopped (for garnish)

Instructions:

1. Prepare the Crab Meat:

If using fresh crab meat, ensure it’s cooked and shell-free.

Shred or finely chop the crab meat, ensuring there are no large chunks.

2. Make the Crab Lollipop Mixture:

In a large mixing bowl, combine the crab meat, ginger-garlic paste, soy sauce, red chili sauce, vinegar, black pepper powder, salt, green chilies, and chopped coriander leaves.

Add one egg and mix thoroughly to bind the ingredients together.

3. Shape the Lollipops:

Take small portions of the crab mixture and shape them into round balls.

Insert a wooden skewer or lollipop stick into each crab ball, shaping it firmly around the stick.

Place the crab lollipops on a plate and refrigerate for about 20 minutes to firm up.

4. Prepare the Batter:

In a separate bowl, whisk together the remaining egg, cornflour, all-purpose flour, baking powder, red chili powder (if using), and a pinch of salt.

Add a little water to make a smooth, thick batter that can coat the crab lollipops well.

5. Fry the Crab Lollipops:

Heat oil in a deep frying pan over medium heat.

Dip each crab lollipop into the batter, ensuring it’s well-coated.

Carefully place the coated crab lollipops into the hot oil.

Fry in batches until golden brown and crispy, about 3-4 minutes per batch.

Remove the crab lollipops from the oil and drain on a paper towel to remove excess oil.

6. Prepare the Sauce:

In a pan, heat a tablespoon of oil over medium heat.

Add the chopped garlic and ginger, and sauté until fragrant.

Add the ketchup, soy sauce, red chili sauce, vinegar, sugar, and black pepper powder, stirring well.

Pour in the cornflour slurry (cornflour mixed with water) and cook until the sauce thickens slightly.

Toss the fried crab lollipops in the sauce, coating them evenly.

7. Serve:

Arrange the Crab Lollipops on a serving plate.

Garnish with chopped spring onions.

Serve hot with additional dipping sauce or as an appetizer.

Conclusion:

Crab Lollipops are a fun and delicious way to enjoy the delicate flavor of crab meat with a crunchy, flavorful twist. Perfect as a party appetizer or a special treat, these lollipops are sure to be a hit with seafood lovers.
