1/4 cup fresh mint leaves, finely chopped
1 tablespoon roasted cumin powder
1 tablespoon coriander powder
1 teaspoon garam masala powder
1/2 teaspoon red chili powder (optional, for extra heat)
1 teaspoon black pepper powder
1/2 teaspoon turmeric powder
1 tablespoon lemon juice
1/4 cup roasted gram flour (besan)
Salt to taste
2 tablespoons oil or ghee (for basting)
Wooden or metal skewers (soak wooden skewers in water for 30 minutes if grilling)


Instructions:

1. Preparing the Chicken Mixture:

In a large mixing bowl, combine the minced chicken, finely chopped onion, ginger-garlic paste, green chilies, coriander leaves, and mint leaves.

Add the roasted cumin powder, coriander powder, garam masala, black pepper powder, red chili powder (if using), turmeric powder, lemon juice, roasted gram flour, and salt.

3. Cooking the Seekh Kebabs:

Grilling:

Preheat your grill or oven to 200°C (390°F).
