1/2 teaspoon turmeric powder
Salt to taste

For the Malwani Masala:

1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 tablespoon fennel seeds
1 tablespoon poppy seeds
4-5 dried red chilies (adjust to spice preference)
1-inch cinnamon stick
4-5 cloves
4-5 green cardamom pods
1 teaspoon black peppercorns
1 teaspoon mustard seeds

For the Malwani Gravy:

2 tablespoons oil
1 cup onions, finely chopped
1 cup tomatoes, pureed
1/2 cup grated coconut
1 tablespoon tamarind pulp
1 tablespoon jaggery (optional)
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
Fresh coriander leaves, chopped (for garnish)

Instructions:

Marinating the Paneer:

In a bowl, mix together yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt.

Add paneer cubes to the marinade, ensuring they are well-coated. Allow them to marinate for at least 30 minutes.

Preparing the Malwani Masala:

Dry roast coriander seeds, cumin seeds, fennel seeds, poppy seeds, dried red chilies, cinnamon stick, cloves, cardamom pods, black peppercorns, and mustard seeds in a pan until fragrant.

Allow the roasted spices to cool, then grind them into a fine powder using a spice grinder or mortar and pestle.

Making the Malwani Gravy:

Heat oil in a pan over medium heat. Add finely chopped onions and sauté until they become golden brown.

Add the tomato puree and cook until the oil separates from the mixture.

Mix in the grated coconut, tamarind pulp, jaggery (if using), turmeric powder, red chili powder, and salt.

Stir in the ground Malwani masala and cook for an additional 5-7 minutes.

Cooking the Marinated Paneer:

In a separate pan, heat a little oil. Add the marinated paneer cubes and sauté until they turn golden brown on all sides.

Combining Paneer with Malwani Gravy:

Gently fold the sautéed paneer into the simmering Malwani gravy, ensuring each piece is coated in the flavorful mixture.

Simmer for an additional 5-7 minutes to allow the paneer to absorb the rich flavors of the Malwani masala.

Garnishing and Serving:

Garnish with freshly chopped coriander leaves.

Serve hot with steamed rice or traditional Malwani bhakri.
