Ingredients:

For the Vegetables:

2 cups mixed vegetables (cauliflower, carrots, bell peppers, and peas), diced
1 cup paneer (cottage cheese), cubed
2 tbsp oil
Salt to taste

For the Angara Masala:

2 tbsp oil
1 cup finely chopped onions
1 tbsp ginger-garlic paste
1 cup tomato puree
1 tsp red chili powder
1 tsp Kashmiri red chili powder (for color)
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp garam masala
Salt to taste

For the Smoky Flavor:

Charcoal piece
1 tsp ghee (clarified butter)

Garnish: Chopped coriander leaves


Instructions:

Vegetables:

Heat 2 tbsp oil in a pan. Add the diced mixed vegetables and paneer cubes.

Sprinkle salt and sauté until the vegetables are slightly tender. Set aside.

Angara Masala:

In a separate pan, heat 2 tbsp oil. Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and cook until the raw aroma disappears.

Stir in tomato puree and cook until the oil separates from the masala.

Add red chili powder, Kashmiri red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, and salt. Mix well.

Cook the masala until it thickens and releases a rich aroma.

Smoky Flavor:

Place a small steel bowl in the center of the cooked masala.

Heat a piece of charcoal until red hot. Place it in the small bowl.

Pour 1 tsp of ghee over the hot charcoal to create smoke.
