Ingredients:
For Koftas:
2 cups boiled and mashed potatoes
1 cup paneer (cottage cheese), grated
1/4 cup finely chopped mixed vegetables (carrots, peas, beans)
2 tablespoons cornflour
Salt to taste
1/2 teaspoon garam masala
Oil for frying
For Curry:
1 cup onions, finely chopped
1 cup tomatoes, pureed
1/4 cup cashews, soaked and ground into a paste
1/4 cup fresh cream
1/2 cup yogurt, beaten
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
2 tablespoons ghee or oil
1 cup water
For Garnish:
Fresh coriander leaves, chopped
Kasuri methi (dried fenugreek leaves)
Instructions:
Making Koftas:
In a large bowl, combine mashed potatoes, grated paneer, chopped mixed vegetables, cornflour, salt, and garam masala.
Mix well until all ingredients are evenly incorporated.
Shape the mixture into round or oval koftas.
Heat oil in a pan and deep fry the koftas until golden brown. Drain excess oil on paper towels and set aside.
Making Curry:
In a separate pan, heat ghee or oil and sauté chopped onions until golden brown.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add tomato puree and cook until the oil separates from the masala.
Stir in turmeric powder, red chili powder, coriander powder, and salt. Cook for another 2-3 minutes.
