Heat oil in a large pan over medium heat.
Add the chopped onions and sauté until they turn translucent.
Add the green chilies and ginger-garlic paste, and sauté until the raw smell disappears.
Add the turmeric powder, red chili powder, coriander powder, and cumin powder, and sauté for another 2 minutes.
Add Tomatoes and Cook:
Add the chopped tomatoes to the pan and cook until they soften and the oil starts to separate from the masala.
Add the Clams:
Add the cleaned clams to the pan and mix well with the onion-tomato masala.
Cover the pan and cook the clams for about 5 minutes, stirring occasionally.
Add Coconut Masala:
Add the roasted coconut paste to the pan and mix it well with the clams and masala.
Add a little water to adjust the consistency of the gravy if needed.
Add Tamarind Pulp:
Stir in the tamarind pulp and curry leaves.
Cover and cook for another 5-7 minutes until the clams are fully cooked and have absorbed the flavors of the masala.
Add Garam Masala:
Sprinkle the garam masala powder over the dish and stir well.
Cook for an additional 2 minutes before turning off the heat.
