Prawn Sukha Recipe

Introduction: 

Prawn Sukha is a popular coastal Indian dish that originates from the Konkan region, known for its bold flavors and aromatic spices. "Sukha" means dry in Hindi, and this dish is characterized by its thick, dry masala that coats the prawns perfectly. Ingredients:

500g prawns, cleaned and deveined
2 tablespoons oil
1 large onion, finely chopped
1 tomato, finely chopped
1 tablespoon ginger-garlic paste
2 green chilies, slit
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon garam masala powder
1/4 cup freshly grated coconut
1 tablespoon tamarind pulp
Salt to taste
Fresh coriander leaves for garnish
Lemon wedges for serving


Instructions:

Marinate the Prawns:

In a bowl, marinate the prawns with turmeric powder, red chili powder, and salt. Set aside for 15-20 minutes to let the flavors infuse.


Prepare the Masala:

Heat oil in a pan over medium heat.

Add the chopped onions and sauté until they turn golden brown.

Stir in the ginger-garlic paste and green chilies, and cook until the raw smell disappears.

Add the chopped tomatoes and cook until they soften and the oil starts to separate.


Cook the Prawns:

Add the marinated prawns to the pan and sauté them with the masala for 3-4 minutes, or until they turn pink and are partially cooked.

Sprinkle coriander powder, cumin powder, and garam masala powder over the prawns, and mix well to coat them with the spices.


Add Coconut and Tamarind:

Stir in the freshly grated coconut and cook for another 2-3 minutes, allowing the coconut to absorb the flavors and slightly toast.

Add the tamarind pulp and a little water if needed, and cook until the prawns are fully cooked and the masala becomes dry and thick.


Garnish and Serve:

Garnish the Prawn Sukha with freshly chopped coriander leaves.

Serve hot with lemon wedges on the side for an extra burst of freshness.
