Ingredients:

500g prawns, cleaned and deveined
2 tablespoons oil or ghee
1 large onion, finely chopped
2 tomatoes, pureed
1 tablespoon ginger-garlic paste
2 green chilies, slit
1/2 cup yogurt, whisked
1/4 cup fresh cream
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon garam masala powder
1/2 teaspoon kasuri methi (dried fenugreek leaves)
1 bay leaf
2-3 cloves
2-3 green cardamoms
1-inch cinnamon stick
Salt to taste
Fresh coriander leaves for garnish
Juice of half a lemon

Instructions:

Prepare the Prawns:

Marinate the prawns with a little turmeric powder, red chili powder, and salt. Set aside for 10-15 minutes.

Cook the Prawns:

Heat 1 tablespoon of oil or ghee in a pan over medium heat.

Add the marinated prawns and sauté them until they turn pink and are cooked through. Remove from the pan and set aside.

Prepare the Masala:

In the same pan, add another tablespoon of oil or ghee.

Add the bay leaf, cloves, cardamoms, and cinnamon stick. Sauté until fragrant.

Add the chopped onions and sauté until they turn golden brown.

Stir in the ginger-garlic paste and green chilies. Cook until the raw smell disappears.

Add the Tomatoes and Spices:

Add the tomato puree to the pan and cook until the oil starts to separate from the masala.

Add coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a few minutes to blend the spices.

Incorporate Yogurt and Cream:

Lower the heat and add the whisked yogurt to the masala, stirring continuously to prevent curdling.

Cook the mixture until it thickens slightly.

Stir in the fresh cream, mixing well to create a rich and creamy gravy.

Finish with Prawns:

Add the sautéed prawns back into the pan, stirring to coat them with the masala.

Crush the kasuri methi between your palms and add it to the dish.

Sprinkle garam masala powder and cook for a few more minutes to allow the prawns to absorb the flavors.

Garnish and Serve:

Squeeze the juice of half a lemon over the dish to enhance the flavors.

Garnish with freshly chopped coriander leaves.

Serve the Prawns Maharani Masala hot with naan, roti, or steamed rice.

Conclusion:

Prawns Maharani Masala is a dish that truly lives up to its royal name. The creamy, aromatic gravy complements the tender prawns perfectly, creating a meal that is both indulgent and satisfying. Whether you're preparing it for a special occasion or a luxurious dinner at home, this dish is sure to impress and delight everyone at the table. Enjoy this exquisite seafood delight with your favorite bread or rice for a meal that feels like a feast.
