Ingredients:

4-6 Bombil (Bombay Duck) fillets
1/2 cup semolina (rava) or rice flour
1 teaspoon turmeric powder
1 teaspoon red chili powder
1/2 teaspoon garam masala
Salt to taste
Juice of 1 lemon
Oil for frying
8 slices of bread (white or whole wheat)
Butter for spreading
1 small onion, thinly sliced
1 small tomato, thinly sliced
1 cucumber, thinly sliced
Green chutney (made from mint, coriander, green chilies, and lemon juice)
Cheese slices (optional)
Salt and pepper to taste

Instructions:

1. Prepare the Bombil:

Clean the Bombil fillets thoroughly and pat them dry with a paper towel.

In a bowl, mix the turmeric powder, red chili powder, garam masala, salt, and lemon juice.

Marinate the Bombil fillets in this spice mixture for 15-20 minutes.

2. Coat and Fry the Bombil:

Heat oil in a frying pan over medium heat.

Coat each marinated Bombil fillet in semolina or rice flour.

Fry the fillets until they are golden brown and crispy on both sides, about 3-4 minutes per side.

Remove the fillets from the pan and drain them on paper towels.

3. Assemble the Sandwich:

Lightly butter each slice of bread.

Spread a layer of green chutney on one slice of bread.

Place a fried Bombil fillet on top.

Add a few slices of onion, tomato, and cucumber.

Season with salt and pepper.

Add a cheese slice if desired.

Top with another slice of bread.

4. Toast the Sandwich:

Heat a skillet or sandwich press.

Toast the sandwich on both sides until the bread is golden and crispy.

If using a sandwich press, toast until the sandwich is heated through and the cheese is melted.

5. Serve:

Slice the sandwich in half and serve hot with extra green chutney or ketchup on the side.

Conclusion:

The Bombil Sandwich is a fusion of traditional coastal flavors with the convenience of a sandwich, making it a perfect choice for those who love seafood with a twist. The crispy Bombil paired with fresh vegetables and tangy chutney offers a delightful culinary experience that's both satisfying and easy to prepare.
