2 cups thick yogurt
3 tbsp besan (gram flour)

2-3 green chilies, finely chopped
10-12 curry leaves
1/2 tsp turmeric powder
1 tsp red chili powder
Salt to taste

Instructions:

Pakoras:

In a mixing bowl, combine besan, chopped onions, chopped spinach (if using), red chili powder, turmeric powder, cumin seeds, and salt.

Gradually add water to form a thick batter with a dropping consistency.

Heat oil in a pan for deep frying.

Drop small portions of the batter into the hot oil and fry until the pakoras are golden brown.

Remove the pakoras from the oil and set them aside.

Kadhi:

In a bowl, whisk together yogurt and besan until smooth.

Heat oil in a kadai or deep pan. Add mustard seeds, cumin seeds, and asafoetida. Allow them to splutter.
