Ingredients:

1/2 tsp red chili powder
Salt to taste
For the Diwani Tempering:
1 tbsp ghee
1 tsp cumin seeds
1 tsp fennel seeds
A pinch of asafoetida (hing)
Garnish:
Chopped coriander leaves
Sliced almonds and pistachios
Instructions:
Vegetable Mix:
In a pan, heat 2 tbsp oil and sauté the mixed vegetables, paneer, mushrooms, bell peppers, cauliflower, and green peas until they are partially cooked. Set aside.
Gravy:
In a separate pan, heat 2 tbsp ghee and sauté finely chopped onions until golden brown.
Add ginger-garlic paste and cook until the raw aroma disappears.
Stir in tomato puree and cook until the oil separates from the masala.
In a blender, combine soaked cashew nuts and melon seeds to make a smooth paste. Add this paste to the pan.
Add fresh cream, garam masala, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
