1 tbsp mirin (or honey as a substitute)

1 tsp fresh ginger, grated

1 clove garlic, minced

1 tsp lime juice

½ tsp red pepper flakes (optional)

For Serving:

1 green onion, thinly sliced

1 tsp toasted sesame seeds

Microgreens or fresh cilantro (for garnish)

Instructions:

Step 1: Prepare the Marinade

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, mirin, ginger, garlic, lime juice, and red pepper flakes.

  2. Set aside half of the mixture for dipping sauce.

  3. Place the tuna steak in the remaining marinade and let it sit for 10-15 minutes.

Step 2: Sear the Tuna

  1. Heat vegetable oil in a skillet over high heat.

  2. If desired, coat the tuna with sesame seeds before searing.

  3. Sear the tuna for about 30-45 seconds per side, ensuring the center remains rare.

  4. Remove from heat and let it rest for a minute before slicing.

Step 3: Slice and Serve
