1. Prepare the Topping
In a skillet over medium heat, melt the butter and sauté the shallot and garlic until fragrant, about 2 minutes.
Add the chopped spinach and parsley, cooking until wilted.
Deglaze the pan with Pernod or white wine (if using) and cook for 1-2 minutes until slightly reduced.
