Ingredients:
2 lbs pork belly, skin on
2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
1 tbsp olive oil
1/2 cup balsamic vinegar
2 tbsp honey
1 tbsp soy sauce
2 cloves garlic, minced
1 tsp Dijon mustard
1/2 tsp red pepper flakes (optional)
Instructions:
Prepare the Pork Belly:
Preheat the oven to 375°F (190°C).
Score the skin of the pork belly with a sharp knife, making shallow cuts in a crisscross pattern.
Rub the pork belly with salt, black pepper, garlic powder, and smoked paprika.
Drizzle with olive oil and let it sit for 10-15 minutes.
Roast the Pork Belly:
Place the pork belly on a wire rack over a baking sheet, skin-side up.
Roast in the oven for about 45 minutes.
Increase the temperature to 425°F (220°C) and roast for another 20-25 minutes until the skin is crispy and golden brown.
Prepare the Balsamic Glaze:
While the pork belly is roasting, heat a small saucepan over medium heat.
Add balsamic vinegar, honey, soy sauce, minced garlic, Dijon mustard, and red pepper flakes.
Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
Remove from heat and set aside.
Glaze and Serve:
Once the pork belly is cooked, remove it from the oven and let it rest for 10 minutes.
Brush the balsamic glaze over the pork belly generously.
Slice into bite-sized pieces and serve warm.
Serving Suggestions:
Pair this pork belly with roasted vegetables, mashed potatoes, or a fresh green salad. The sweet and tangy balsamic glaze complements the richness of the pork beautifully.
