Chicken Sagoti Recipe

Introduction: 

Chicken Sagoti is a delicious and aromatic dish that hails from the coastal region of Goa, India. This traditional Goan curry is rich, flavorful, and infused with the warm spices and coconut that the region is famous for. The combination of tender chicken pieces with the creamy, spiced coconut gravy makes this dish a favorite for many. Ingredients:

500g chicken, cut into medium pieces
1 cup grated coconut
2 medium onions, finely chopped
2 medium tomatoes, chopped
1 tablespoon ginger-garlic paste
2-3 green chilies, slit
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 tablespoon poppy seeds
1 teaspoon turmeric powder
1 tablespoon red chili powder
1 teaspoon garam masala powder
4-5 cloves
1-inch piece cinnamon stick
4-5 black peppercorns
2-3 tablespoons oil
Salt to taste
Fresh coriander leaves for garnish


Instructions:


Marinate the Chicken:

In a bowl, add the chicken pieces, turmeric powder, red chili powder, and a pinch of salt. Mix well and set aside for at least 20 minutes.


Prepare the Masala Paste:

In a pan, dry roast the coriander seeds, cumin seeds, poppy seeds, cloves, cinnamon stick, and black peppercorns until fragrant. Allow them to cool.

Grind the roasted spices along with grated coconut into a fine paste using a little water. Set aside.


Cook the Curry:

Heat oil in a heavy-bottomed pan. Add the finely chopped onions and sauté until they turn golden brown.

Add the ginger-garlic paste and green chilies. Sauté for a few more minutes until the raw smell disappears.

Add the chopped tomatoes and cook until they become soft and the oil starts to separate.

Now, add the prepared coconut masala paste and cook on medium heat until the oil begins to separate from the masala.


Add the Chicken:

Add the marinated chicken pieces to the pan and stir well to coat them with the masala.

Cook the chicken on medium heat until it starts to brown slightly.


Simmer the Curry:

Add enough water to the pan to make a thick gravy. Season with salt to taste.

Cover the pan and let the chicken simmer on low heat for about 20-25 minutes, or until the chicken is fully cooked and tender.

Stir occasionally and adjust the consistency of the gravy by adding more water if necessary.


Finish and Serve:

Once the chicken is cooked and the gravy has thickened to your liking, add garam masala powder and stir well.

Garnish with fresh coriander leaves.
