Ingredients:

1 kg mutton, cut into pieces
2 onions, finely sliced
1 cup plain yogurt (curd)
2 tomatoes, finely chopped
2 tablespoons ginger-garlic paste
1 teaspoon turmeric powder
2 teaspoons red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
Salt to taste
4 tablespoons ghee (clarified butter) or oil
Fresh coriander leaves for garnishing

For the Marinade:

1/2 cup plain yogurt
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
Salt to taste


Instructions:

In a large bowl, combine the mutton pieces with the ingredients for the marinade - yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well to coat the mutton evenly. Cover and marinate for at least 1 hour, or preferably overnight in the refrigerator.


Heat ghee or oil in a heavy-bottomed pan or pressure cooker over medium heat. Add the sliced onions and sauté until golden brown.


Add the chopped tomatoes and cook until they turn soft and mushy.


Stir in the ginger-garlic paste and cook for another 2-3 minutes until the raw aroma disappears.


Add the marinated mutton pieces to the pan along with any excess marinade. Cook, stirring occasionally, until the mutton is well-browned on all sides.


Sprinkle the turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala over the mutton. Mix well to coat the mutton with the spices.


Pour in 1/2 cup of water and season with salt to taste. Bring the mixture to a gentle boil, then reduce the heat to low, cover the pan, and simmer for about 45 minutes to 1 hour, or until the mutton is tender and cooked through. If using a pressure cooker, cook for about 4-5 whistles.


Once the mutton is cooked, add the plain yogurt (curd) to the pan and stir well to combine. Simmer for another 5-7 minutes, stirring occasionally, until the gravy thickens and the flavors meld together.
