Fusion Feast: Spring Onion Rice with Flavorful Chicken Curry

Spring Onion Rice:

Ingredients:

1 cup basmati rice, washed and soaked for 30 minutes
2 cups spring onions, finely chopped (both green and white parts)

1 teaspoon cumin seeds
2 green chilies, finely chopped
1/2 teaspoon turmeric powder
Salt to taste
Fresh coriander leaves for garnish


Instructions:

Heat ghee or oil in a pan over medium heat.

Add cumin seeds and let them splutter.

Add chopped green chilies and sauté for a minute.

Toss in the finely chopped spring onions and sauté until they become soft and slightly caramelized.

Add drained soaked rice, turmeric powder, and salt. Mix well.

500g chicken, cut into pieces

1/2 cup yogurt
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Fresh coriander leaves for garnish
Salt to taste
2 tablespoons oil or ghee


Instructions:

Heat oil or ghee in a pan, add chopped onions, and sauté until golden brown.

Add ginger-garlic paste and sauté until the raw aroma disappears.

Pour in the tomato puree and cook until the oil separates.

Whisk the yogurt and add it to the pan, stirring continuously.

Add cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Cook until the oil floats on top.
