SOURCE

Ingredients:

For the Dough:

2 cups whole wheat flour
Water, as needed
Salt, to taste

For the Paneer Filling:

1 cup crumbled paneer (cottage cheese)
1 small onion, finely chopped
1 green chili, finely chopped
1 tablespoon fresh coriander, chopped
1/2 teaspoon cumin powder
1/2 teaspoon garam masala
Salt, to taste

Instructions:

Prepare the Dough:

In a large mixing bowl, combine the whole wheat flour and a pinch of salt.

Gradually add water and knead the mixture into a soft and pliable dough. Cover the dough and let it rest while you prepare the filling.

Prepare the Paneer Filling:

In a separate bowl, combine crumbled paneer, chopped onion, green chili, fresh coriander, cumin powder, garam masala, and salt. Mix well to create a flavorful paneer filling.

Forming the Parathas:

Divide the rested dough into equal-sized balls (slightly smaller than a golf ball).

Roll each ball into a small disc and place a generous portion of the paneer filling in the center.

Sealing and Rolling:

Bring the edges of the dough together to encase the filling, creating a stuffed ball.

Gently roll the stuffed ball into a flat, round paratha, dusting with flour as needed to prevent sticking.

Cooking the Paneer Parathas:

Heat a griddle or flat pan over medium heat.

Place the rolled paratha on the hot surface and cook until bubbles appear on the surface.

Flip the paratha, applying ghee or oil on the cooked side. Continue cooking until both sides are golden brown.

Serve Hot:

Repeat the process for the remaining dough balls.

Serve the Paneer Parathas hot with yogurt, pickles, or a side of your favorite chutney.

Enjoy the delightful combination of soft, whole wheat layers and the spiced richness of the paneer filling in every bite. Paneer Parathas make for a wholesome and flavorful meal that captures the essence of traditional Indian cuisine.
