For the Koftas:

2 tbsp besan (gram flour)

1/2 tsp green cardamom powder
A pinch of saffron strands (soaked in warm milk)
Oil for frying

For the Gravy:

2 tbsp ghee (clarified butter)
1 cup finely chopped onions
1 tbsp ginger-garlic paste
1 cup tomato puree
1/4 cup cashew nuts, soaked in warm water
1/4 cup melon seeds, soaked in warm water
1/2 cup fresh cream
1 tsp garam masala
1 tsp coriander powder
1/2 tsp turmeric powder
Salt to taste

For Garnish:

Chopped coriander leaves
Saffron strands (optional)
Slivered almonds and pistachios


Instructions:

Koftas:

In a mixing bowl, combine grated paneer, khoya, besan, chopped nuts, cardamom powder, and saffron-soaked milk.

Mix the ingredients to form a smooth and soft dough.

Divide the dough into equal portions and shape them into round koftas.

Heat oil in a pan and deep fry the koftas until they turn golden brown. Set aside.

Gravy:

In a separate pan, heat ghee and sauté finely chopped onions until golden brown.

Add ginger-garlic paste and cook until the raw aroma disappears.

Stir in tomato puree and cook until the oil separates from the masala.
