Savoring the Crunch: A Delightful Shev Puri Recipe

Ingredients:

For the Puris:

1 cup semolina (sooji)
1/4 cup all-purpose flour (maida)
Water for kneading
Salt to taste
Oil for frying

For the Filling:

1 cup boiled and mashed potatoes
1/2 cup boiled black chickpeas (kala chana)
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
1/4 cup chopped coriander leaves
1/4 cup tamarind chutney
1/4 cup mint chutney
Chaat masala to taste
Salt to taste

For Garnish:

Sev (crispy gram flour noodles)
Chopped coriander leaves
Pomegranate seeds (optional)


Instructions:

For the Puris:In a bowl, mix semolina, all-purpose flour, salt, and water to form a smooth, stiff dough.

Cover the dough and let it rest for 15-20 minutes.

Divide the dough into small balls and roll them into puris (small, round, flatbreads).

Heat oil in a pan and deep-fry the puris until they puff up and turn golden brown. 

Remove and set aside.


For the Filling:

In a large bowl, mix mashed potatoes, boiled chickpeas, chopped onions, tomatoes, and coriander leaves.
Add chaat masala, salt, and mix well.
Just before serving, add tamarind chutney and mint chutney to the filling mixture. Adjust the quantity according to your taste.


Assembling Shev Puri:

Take a puri and gently make a hole in the center.
Spoon some of the filling into the puri.
Drizzle extra tamarind chutney and mint chutney on top.
Sprinkle sev generously over the puris.
Garnish with chopped coriander leaves and pomegranate seeds.

Serve immediately and enjoy the burst of flavors in every bite!
