4 soft-boiled eggs

2 cups baby spinach or bok choy

1 cup sliced bamboo shoots

2 green onions, thinly sliced

Instructions:

Prepare the Broth:

Heat the vegetable oil in a large pot over medium heat. Add the minced garlic, ginger, and onion halves. Sauté for about 3-4 minutes until they become fragrant and slightly caramelized.


Add the carrots, celery, and dried shiitake mushrooms to the pot. Continue to sauté for another 5 minutes.
