1 cup dried kidney beans (rajma)

3 cups water (for soaking)

4 cups water (for cooking)

1 teaspoon salt

2 tablespoons oil or ghee

1 large onion, finely chopped

2-3 cloves of garlic, minced

1-inch piece of ginger, minced

2 medium tomatoes, pureed

1 teaspoon cumin seeds

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

1 teaspoon garam masala

Salt to taste

Chopped cilantro (coriander leaves) for garnishing



Instructions:


1. Soaking the Kidney Beans:

Rinse the dried kidney beans under running water.

Soak the kidney beans in 3 cups of water overnight or for at least 8 hours.


2. Cooking the Kidney Beans:

Drain and rinse the soaked kidney beans.

In a pressure cooker or large pot, add the kidney beans and 4 cups of water.

Add 1 teaspoon of salt.
