A Lebanese-Style Feast of Charcoal-Grilled Meat, Chicken, Kafta & Fresh Sides
Few meals bring a family together quite like a big platter of grilled meat.
A Family Grill Platter is designed to be placed in the middle of the table, surrounded by warm pita bread, creamy hummus, garlic sauce, fresh salad, pickles and grilled vegetables. Instead of preparing one main dish, you prepare several different grilled favorites so everyone can choose what they like.
For this platter, we combine chicken skewers, lamb kafta, beef kebabs and lamb chops. The meats are seasoned differently but share one important ingredient: the smoky flavor of a hot grill.
It is a relaxed meal, perfect for weekends, family gatherings, celebrations or a summer barbecue.
Why You'll Love This Family Grill Platter
- Four different grilled meats in one meal
- Perfect for sharing
- Lebanese-inspired garlic and spice flavors
- Plenty of fresh vegetables and herbs
- Easy to adapt for children and adults
- Excellent for weekend barbecues
- Most of the preparation can be done ahead
- Everyone can build their own pita wrap or plate
The beauty of a family platter is that it does not need to look perfectly arranged.
It should look abundant.

For a generous family platter, prepare:
Chicken Shish Taouk
Tender chicken marinated with yogurt, lemon, garlic and paprika.

You can substitute any of these depending on what your family enjoys.

- 2 tbsp lemon juice
- 3 garlic cloves, crushed
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp black pepper
- ½ tsp salt
For the Platter
Prepare:
- 8–12 pita breads
- 500 g hummus
- 250 g toum
- 250 ml tahini sauce
- 300 g Lebanese pickles
- 3 tomatoes
- 2 cucumbers
- 2 onions
- 2 bell peppers
- Fresh parsley
- Fresh mint
- 2 lemons
Optional:
- Baba ghanoush
- Tabbouleh
- Fattoush
- Batata harra
- Grilled halloumi
Step 1 — Marinate the Chicken
Cut the chicken into bite-sized pieces.
Place it in a large bowl.
Add the yogurt, olive oil, lemon juice, tomato paste, garlic, paprika, cumin, coriander, pepper and salt.
Mix until every piece is coated.
Cover and refrigerate for at least 4 hours, preferably overnight.
Thread the chicken onto skewers before grilling.
Step 2 — Prepare the Kafta
Place the minced lamb in a bowl.
Add:
- onion
- parsley
- garlic
- cumin
- coriander
- allspice
- paprika
- pepper
- salt
Mix thoroughly until the ingredients are evenly distributed and the meat becomes cohesive.
Shape the mixture around flat skewers.
Keep the kafta chilled until the grill is ready.
Step 3 — Season the Beef
Place the beef cubes in a bowl.
Add olive oil, lemon juice, garlic and spices.
Mix well.
Allow the beef to marinate for approximately 1–2 hours.
Thread the cubes onto skewers, leaving small spaces between the pieces.
Step 4 — Prepare the Lamb Chops
Combine olive oil, lemon juice, garlic, paprika, cumin, pepper and salt.
Rub this mixture over the lamb chops.
Let them rest for about 30–60 minutes before grilling.
Because lamb chops are relatively thin, they do not require a long marinade.
Step 5 — Prepare the Family Grill
Light the charcoal and allow it to become hot.
You want the coals glowing and covered with a light layer of ash.
Create two heat zones:
Hot Zone
For:
- beef kebabs
- lamb chops
- initial browning
Medium Zone
For:
- chicken
- kafta
- finishing meat that is browning too quickly
This simple two-zone arrangement makes it much easier to cook several different meats.
Step 6 — Grill the Chicken
Place the chicken skewers over medium-high heat.
Turn them regularly so they brown evenly.
The outside should develop small charred edges while the inside remains juicy.
Depending on the size of the pieces and grill temperature, cook for approximately 10–15 minutes.
Chicken should reach 74°C / 165°F internally.
Transfer the cooked chicken to a warm plate and loosely cover.
Step 7 — Grill the Kafta
Place the kafta over the grill.
Let it develop a crust before turning.
Rotate carefully so it cooks evenly without breaking apart.
The edges should become slightly charred.
Cook until the kafta is fully cooked through.
Do not press down on the meat with a spatula.
That only forces out the juices.
Step 8 — Grill the Beef Kebabs
Place the beef skewers over the hot section of the grill.
Turn them several times to brown all sides.
The exact cooking time depends on the size of the cubes and your preferred doneness.
For especially tender kebabs, avoid overcooking.
Move them to the cooler section if the outside is becoming too dark before the inside is ready.
Step 9 — Grill the Lamb Chops
Place the lamb chops directly over the hot coals.
Cook for a few minutes per side, depending on thickness and desired doneness.
You want:
dark golden crust + smoky edges + juicy center
Move them away from direct heat if the fat begins causing excessive flames.
Let the chops rest for several minutes before serving.
Step 10 — Grill the Vegetables
While the meat rests, use the remaining grill heat for vegetables.
Grill:
- tomatoes
- onions
- bell peppers
You can also add:
- eggplant
- zucchini
- mushrooms
Brush lightly with olive oil and season with salt.
Let them develop dark grill marks.
The slightly smoky vegetables are an important part of the platter because they balance the richness of the meat.
The Garlic Sauce
A family grill platter needs a creamy garlic sauce.
Use toum if available.
Its strong garlic flavor is particularly delicious with chicken.
Place a generous bowl of toum beside the platter rather than drizzling it over all the meat.
That way, everyone can use as much as they like.
Hummus
Place hummus in a shallow serving bowl.
Make a small depression in the center with the back of a spoon.
Drizzle with olive oil.
For a beautiful family-table presentation, sprinkle a little paprika or chopped parsley over the top.
Fresh Family Salad
Make a simple salad from:
- tomatoes
- cucumber
- parsley
- mint
- red onion
- lemon juice
- olive oil
- salt
Keep the dressing light.
The salad should taste fresh and acidic rather than heavy.
Building the Family Grill Platter
Use your largest serving platter.
Start with the meats.
Arrange the chicken on one side.
Place the kafta beside it.
Add the beef kebabs.
Finish with the lamb chops.
Then fill the empty spaces with:
- grilled tomatoes
- grilled peppers
- grilled onions
- lemon wedges
- parsley
- mint
- pickles
Place small bowls of hummus, toum and tahini around the platter.
Finally, add warm pita bread to the table.
The result should look generous rather than overly formal.
The Best Way to Serve It
Don't serve this meal as individual restaurant-style plates.
Instead, put everything in the center of the family table.
Everyone takes a piece of pita.
Then they choose:
A little chicken.
A piece of kafta.
Some beef.
A lamb chop.
A spoonful of hummus.
A little toum.
Some pickles.
A piece of grilled tomato.
And another piece of pita.
That is what makes a family grill platter special.
Family Grill Wraps
Warm a pita.
Spread a little toum over it.
Add:
- chicken or kafta
- tomatoes
- parsley
- pickles
- grilled onion
Fold the bottom upward and roll.
For beef or lamb, use tahini sauce instead of toum.
What to Serve Alongside
For a larger Lebanese-inspired family meal, add:
Hummus
Creamy chickpeas with tahini and lemon.
Tabbouleh
Fresh parsley, tomato, bulgur, lemon and olive oil.
Fattoush
Crisp vegetables with toasted pita.
Batata Harra
Spicy garlic and coriander potatoes.
Baba Ghanoush
Smoky roasted eggplant blended with tahini and lemon.
Pickled Vegetables
Their acidity is excellent with rich grilled meat.
A Complete Family Dinner Menu
For a particularly large gathering, serve:

How Much Meat Do You Need?
For approximately 6 hungry adults, around 2.5–3 kg of mixed meat makes a very generous feast when served with bread, hummus, salads and other sides.
A balanced combination could be:
| Meat | Amount |
|---|---|
| Chicken | 750 g |
| Lamb kafta | 750 g |
| Beef | 750 g |
| Lamb chops | 8–12 pieces |
For children or lighter eaters, you can reduce the total quantity.
Tips for a Better Family Grill
Don't overcrowd the grill
Crowding lowers the temperature and causes the meat to steam instead of char.
Keep the charcoal hot
Good charcoal heat is more important than complicated seasoning.
Don't constantly turn everything
Give the meat enough time to develop a crust before rotating it.
Rest the meat
A few minutes of resting helps retain its juices.
Serve immediately
Mixed grill is at its best straight from the fire.
Keep sauces separate
Strong sauces such as toum can overpower delicate grilled meat if poured over everything.
Can You Make It Without Charcoal?
Absolutely.
A gas barbecue works very well.
You can also use a cast-iron grill pan indoors.
For the closest flavor to charcoal, use very high heat and avoid overcrowding the pan.
Cook the meats in batches.
The goal is to create a deep brown crust rather than simply cooking the meat until done.
Leftover Ideas
If there is leftover meat, don't throw it away.
Next-Day Wrap
Pita + leftover meat + toum + pickles + tomato + parsley.
Grill Rice Bowl
Serve chopped meat over rice with hummus and tahini.
Breakfast Plate
Reheat leftover meat and serve with eggs, tomatoes, cucumber and pita.
Loaded Hummus
Spread hummus onto a plate and top with chopped leftover kafta or beef, parsley and olive oil.
Final Thoughts
The Family Grill Platter is about abundance and sharing.
It doesn't ask you to choose between chicken, beef or lamb.
You get all of them.
The chicken is tender and garlicky.
The kafta is fragrant with parsley and warm spices.
The beef brings a deep smoky flavor.
The lamb chops add richness.
Then come the hummus, toum, tahini, pickles, fresh vegetables and warm pita.
Everything meets in the middle of the table.
And that is the real purpose of a family grill:
not simply to cook meat, but to bring everyone to the same table.
