Sweet Cheese Delight is a Lebanese-inspired dessert based on the beloved Halawet El Jibn (حلاوة الجبن)—a delicate sweet made from a soft cheese-and-semolina dough wrapped around a creamy filling and finished with fragrant orange blossom syrup and pistachios.
It is one of those desserts that beautifully combines flavors and textures: soft cheese dough, creamy filling, floral syrup and crunchy pistachios.
🍰 What Is Sweet Cheese Delight?
Halawet El Jibn literally means “sweetness of cheese.”
The dessert is particularly associated with Lebanon and the wider Levant. Its signature feature is a thin, tender layer made from cheese and semolina.
The cheese dough is rolled flat, filled with ashta-style cream, rolled or folded, and then cut into attractive portions.
A generous drizzle of orange blossom syrup and a scattering of pistachios complete the dessert.

👩🍳 How to Make Sweet Cheese Delight
Step 1: Prepare the Cream Filling
Place the milk, cornstarch and sugar in a saucepan.
Whisk thoroughly while the mixture is still cold.
Place over medium-low heat.
Continue stirring until the mixture thickens into a smooth cream.
Remove from the heat.
Add the orange blossom water and rose water.
Allow it to cool slightly.
Fold in the heavy cream.
Cover the surface with plastic wrap and refrigerate until completely chilled.
Step 2: Make the Sugar Syrup
Combine sugar and water in a saucepan.
Bring to a gentle boil.
Add the lemon juice.
Simmer for approximately 5–7 minutes.
Remove from the heat.
Stir in orange blossom water.
Allow the syrup to cool completely.
The syrup should be fragrant and pourable rather than extremely thick.
Step 3: Prepare the Cheese
Grate the mozzarella.
If the cheese contains significant moisture, gently squeeze it using a clean kitchen towel.
This is important because excess moisture can make the dough difficult to handle.
Step 4: Make the Cheese Dough
Place the grated mozzarella in a non-stick saucepan over low heat.
Stir continuously as the cheese begins to melt.
Add the semolina gradually.
Continue stirring.
The cheese will begin to come together with the semolina.
Add the sugar.
Continue cooking and stirring until the mixture becomes a smooth, stretchy dough.
Add the rose water and orange blossom water.
Mix thoroughly.
Step 5: Roll the Dough
While the cheese mixture is still warm, place it between two sheets of parchment paper.
Roll it into a thin rectangular sheet.
Aim for approximately 3–5 mm thickness.
The dough should be thin enough to roll easily but strong enough to hold the cream filling.
Step 6: Add the Cream
Spread a generous but even layer of the chilled cream filling over the cheese sheet.
Leave approximately 2–3 cm uncovered along one long edge.
This will help seal the roll.
Step 7: Roll
Carefully roll the cheese sheet into a tight cylinder.
Work gently because the dough is soft.
Once rolled, place the seam underneath.
Refrigerate for approximately 30 minutes to help it firm up.
Step 8: Cut
Using a sharp knife, cut the roll into individual pieces.
Wipe the knife between cuts for cleaner edges.
Arrange the pieces upright or slightly overlapping on a serving platter.
Step 9: Garnish
Drizzle with cooled orange blossom syrup.
Generously sprinkle with finely chopped pistachios.
For an elegant Lebanese presentation, add:
- Whole pistachios
- Dried rose petals
- A few drops of orange blossom syrup
🌿 The Secret to Good Sweet Cheese Delight
The most important thing is controlling the cheese dough.
If the dough is too thick, the dessert becomes heavy.
If it is too thin, it can tear when filled.
The ideal dough should be:
Soft + elastic + slightly chewy + thin
The cream should be smooth and light enough to contrast with the cheese layer.
🍊 Orange Blossom Syrup
Orange blossom water is one of the defining aromas of many Lebanese desserts.
Don't use too much.
A small amount gives the syrup a beautiful floral character without making the dessert taste perfumed.
You can also add a little rose water for a more traditional Middle Eastern aroma.
🥜 Pistachio Topping
Pistachios aren't simply decoration—they provide an important textural contrast.
The dessert has:
Soft cheese dough → creamy filling → crunchy pistachios
For the best presentation, use bright green finely chopped pistachios.

The finished dessert should be soft, creamy, delicately floral and lightly chewy, with pistachios providing the final crunchy touch.
