Lebanese Pistachio Tart



A Lebanese-style Pistachio Tart is a rich, elegant dessert made with a crisp buttery pastry shell, creamy pistachio filling, and the delicate flavors of orange blossom water and rose water. It can be finished with roasted pistachios for a beautiful Middle Eastern character.

Ingredients

For the Tart Shell

  • 250 g all-purpose flour
  • 125 g unsalted butter, cold and cubed
  • 75 g powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1–2 tablespoons cold water, if required

For the Pistachio Filling

  • 150 g unsalted shelled pistachios
  • 80 g granulated sugar
  • 100 g unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange blossom water
  • ½ teaspoon rose water
  • ¼ teaspoon salt

For the Topping

  • 50–75 g roasted pistachios, roughly chopped
  • 1–2 tablespoons finely ground pistachios
  • Optional: edible dried rose petals
  • Optional: a little powdered sugar

Optional Orange Blossom Syrup

  • 2 tablespoons honey
  • 1 tablespoon water
  • 1 teaspoon orange blossom water

1. Make the Tart Pastry

Place the flour, powdered sugar, and salt in a bowl.

Add the cold butter.

Rub the butter into the flour using your fingertips until the mixture resembles fine breadcrumbs.

Add the egg and vanilla.

Mix gently until the dough begins to come together.

If necessary, add cold water one teaspoon at a time.

Don't overwork the dough.

Shape it into a flat disc, wrap it, and refrigerate for 30–60 minutes.


2. Prepare the Tart Shell

Preheat the oven to:

180°C / 350°F

Lightly flour your work surface.

Roll the dough to approximately 3–4 mm thickness.

Transfer it carefully into a 23–25 cm tart pan.

Press the pastry gently into the bottom and sides.

Trim the excess dough.

Prick the base several times with a fork.

Cover with parchment paper and add pie weights or dry beans.

Bake for 15 minutes.

Remove the weights and parchment.

Bake for another 5–8 minutes.

The shell should be lightly golden but not dark.

Remove it from the oven.


3. Make the Pistachio Filling

Place the pistachios and sugar into a food processor.

Process until they become a fine pistachio meal.

Don't process for too long, otherwise the pistachios can release their oils and turn into pistachio butter.

Transfer the ground pistachios to a bowl.

Add the softened butter.

Mix until smooth.

Add the eggs one at a time, mixing after each addition.

Add:

  • Flour
  • Vanilla
  • Orange blossom water
  • Rose water
  • Salt

Mix until you have a smooth, thick pistachio cream.

The filling should smell strongly of pistachio with only a subtle floral aroma.


4. Fill the Tart

Spread the pistachio mixture evenly inside the partially baked tart shell.

Smooth the surface using a spatula.

Don't overfill the shell because the filling will expand slightly during baking.

Sprinkle a small amount of chopped pistachios over the surface.


5. Bake the Pistachio Tart

Reduce the oven temperature slightly to:

170°C / 340°F

Bake for approximately 25–35 minutes.

The exact time depends on the depth of your tart.

The filling should be:

  • Firm around the edges
  • Slightly soft in the center
  • Lightly golden on top

Don't overbake it.

The center will continue to firm as the tart cools.

Remove from the oven and allow it to cool completely.


6. Prepare the Optional Orange Blossom Syrup

For an extra Lebanese flavor, combine:

  • Honey
  • Water

Warm them gently in a small saucepan.

Remove from the heat.

Add orange blossom water.

Mix well.

Allow it to cool slightly.

Brush a very thin layer over the cooled pistachio tart.

This adds sweetness and a subtle floral aroma.


7. Decorate

Once the tart is completely cool, decorate the top with:

  • Roughly chopped roasted pistachios
  • Finely ground pistachios
  • A few edible dried rose petals

For a sophisticated appearance, keep the decoration simple.

You can create a border of chopped pistachios around the edge while leaving the center smooth.


8. Chill Before Serving

Place the tart in the refrigerator for approximately 30–60 minutes.

This helps the pistachio filling become firm and makes slicing easier.

Allow it to sit at room temperature for about 10 minutes before serving.


Flavor Profile

The finished tart should have a rich combination of:

Buttery pastry
Deep roasted pistachio flavor
Creamy, slightly nutty filling
Subtle orange blossom aroma
Very light rose fragrance

The pistachio should remain the dominant flavor.


Lebanese-Style Variation

For an even more traditional Middle Eastern character, serve the tart with:

  • Extra roasted pistachios
  • Pomegranate seeds
  • A tiny amount of orange blossom syrup
  • Fresh mint
  • Unsweetened Arabic coffee

You can also replace part of the pistachio topping with ground pistachio powder, creating a beautiful green surface.

Important Tip

Don't use artificial green food coloring.

A high-quality pistachio tart should have a natural muted green color rather than an extremely bright green. The flavor and texture are much more important than the color.
