Bihari Aloo Dum: A Spicy and Flavorful Delight

1 bay leaf
2-3 dried red chilies

1 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala powder
1 tsp cumin powder
1 tsp black pepper powder
2 tbsp mustard oil
Salt to taste
Fresh coriander leaves for garnish
Water as needed


Instructions:

1. Preparing the Potatoes:

Wash the baby potatoes thoroughly. If using medium-sized potatoes, peel and cut them into large cubes.

Boil the potatoes in salted water until they are just cooked but still firm. Do not overcook them.

Once boiled, drain the potatoes and let them cool slightly. Gently peel the skins off the baby potatoes.

Prick the potatoes with a fork so that they can absorb the spices later.


2. Frying the Potatoes:

Heat mustard oil in a pan until it starts to smoke slightly. This step is crucial as it helps in reducing the pungency of the mustard oil.

Add the boiled potatoes to the pan and fry them until they turn golden brown on all sides. Remove the potatoes from the pan and set them aside.


3. Preparing the Masala:

In the same pan, add a little more mustard oil if needed. Add the cumin seeds, mustard seeds, bay leaf, and dried red chilies. Sauté until the seeds start to crackle.
