2 tablespoons gram flour (besan)
2 tablespoons yogurt
2 tablespoons lemon juice
2 tablespoons oil
Skewers for grilling

For the Gola Kabab Masala:

2 tablespoons oil
1 large onion, finely chopped
2 tomatoes, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala powder
Salt to taste
Fresh coriander leaves for garnish

Instructions:

Prepare the Gola Kabab Mixture:

In a large mixing bowl, combine the minced meat, chopped onion, green chilies, ginger-garlic paste, fresh coriander leaves, fresh mint leaves, cumin powder, coriander powder, garam masala powder, turmeric powder, red chili powder, salt, gram flour, yogurt, lemon juice, and oil. Mix well to combine all the ingredients thoroughly. Let the mixture marinate for at least 1 hour in the refrigerator to allow the flavors to meld.

Shape the Kababs:

After marination, take small portions of the kabab mixture and shape them into round or oval-shaped kababs. Thread the kababs onto skewers, ensuring they are evenly spaced.

Grill the Kababs:

Preheat the grill or barbecue to medium-high heat. Brush the grill grates with oil to prevent the kababs from sticking. Place the skewered kababs on the grill and cook for 8-10 minutes on each side or until the kababs are cooked through and charred slightly on the outside. Remove the kababs from the grill and set aside.

Prepare the Gola Kabab Masala:

Heat oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.

Add Spices and Tomatoes:

Add the ginger-garlic paste and sauté for another minute. Then, add the cumin seeds, coriander powder, turmeric powder, red chili powder, and garam masala powder. Stir well to combine the spices with the onions.

Cook the Masala:

Add the chopped tomatoes and cook until they turn soft and the oil begins to separate from the masala.

Simmer:

Once the masala is cooked, add a little water to achieve the desired consistency. Season with salt to taste and let the masala simmer for a few minutes.

Assemble and Serve:

Place the grilled Gola Kababs on a serving platter and pour the prepared Gola Kabab Masala over them. Garnish with fresh coriander leaves.

Serve Hot:

Serve the Gola Kabab Masala hot with naan, roti, or steamed rice, accompanied by fresh salad and mint chutney.

Tips:For a smoky flavor, you can cook the kababs over a charcoal grill.

Adjust the quantity of red chili powder according to your spice preference.

You can customize the kabab mixture by adding grated paneer (Indian cottage cheese) or finely chopped vegetables like bell peppers and carrots for added flavor and texture.
