SOURCE

Ingredients:

4 large potatoes
250 grams minced meat (beef, lamb, or chicken)
2 tablespoons vegetable oil
1 onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt to taste
Fresh coriander leaves for garnish

Instructions:

Begin by washing the potatoes thoroughly and patting them dry. Carefully slice off the top of each potato to create a lid. Using a spoon or a melon baller, hollow out the potatoes, leaving a thick shell all around. Set aside the scooped-out potato flesh for later use.

Heat vegetable oil in a large skillet over medium heat. Add chopped onions and green chilies, and sauté until the onions turn translucent.

Add ginger-garlic paste to the skillet and sauté for another minute until the raw aroma disappears.

Now, add the minced meat to the skillet and cook until it is browned and cooked through, breaking up any lumps with a spoon.

Stir in the chopped tomatoes and cook until they soften and release their juices.

Add cumin powder, coriander powder, turmeric powder, red chili powder, and salt to the skillet. Mix well to combine all the spices with the meat mixture.

Cook the mixture for a few more minutes until the flavors meld together, and the excess moisture evaporates. Remove the skillet from the heat and let the filling cool slightly.

Preheat the oven to 180°C (350°F).

Stuff the hollowed-out potatoes with the prepared keema (minced meat) filling, pressing it down gently to fill the cavity completely. Place the potato lids back on top.

Arrange the stuffed potatoes on a baking tray lined with parchment paper. Brush the tops of the potatoes with a little oil for a golden finish.

Bake the Keema Bharva Aloo in the preheated oven for 25-30 minutes or until the potatoes are tender and the tops are lightly browned.

Once done, remove the potatoes from the oven and let them cool slightly. Garnish with freshly chopped coriander leaves before serving.

Serve the Keema Bharva Aloo hot as a standalone dish or as a side with roti, naan, or rice.

Tips:

You can customize the spices according to your taste preferences. Add more red chili powder for extra heat or reduce it for a milder flavor.

Ensure that the potatoes are cooked through before serving. You can check by inserting a fork into the potatoes to see if they are tender.

Leftover filling can be used to make sandwiches or stuffed bell peppers.

For a vegetarian version, you can replace the minced meat with crumbled paneer (Indian cottage cheese) or mashed potatoes mixed with spices and vegetables.

Conclusion:

Keema Bharva Aloo is a delightful dish that combines the earthiness of potatoes with the savory richness of spiced minced meat. With its aromatic flavors and satisfying texture, it's sure to become a favorite among your family and friends. Follow this easy recipe to create a memorable meal that will leave everyone craving for more.
