Ingredients:

2 cups fresh fenugreek leaves (methi), washed and chopped
1 cup green peas (matar), fresh or frozen
1 cup fresh cream
1 large onion, finely chopped
2 tomatoes, pureed
2-3 green chilies, finely chopped
1-inch piece of ginger, grated
4-5 cloves of garlic, minced
1 teaspoon cumin seeds
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
Salt to taste
2 tablespoons ghee or oil
Cashew nuts (optional), for garnish
Fresh cilantro leaves, chopped, for garnish


Instructions:

Heat ghee or oil in a pan over medium heat. Add cumin seeds and let them splutter.


Add finely chopped onions and sauté until they turn golden brown.


Add minced garlic, grated ginger, and chopped green chilies. Sauté for another couple of minutes until the raw smell disappears.


Now, add the pureed tomatoes to the pan and cook until the oil starts to separate from the masala.


Once the masala is cooked well, add turmeric powder, red chili powder, coriander powder, and salt. Mix everything together and cook for a minute.


Add the chopped fenugreek leaves (methi) to the masala mixture and stir well. Let it cook for about 5-7 minutes until the methi leaves wilt and release their aroma.
