Authentic Andhra Style Chicken Curry: A Spicy Delight

Ingredients:

500 grams chicken, cut into pieces
2 onions, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
2 tablespoons red chili powder (adjust to taste)
1 tablespoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon garam masala
Salt to taste
3 tablespoons oil
Fresh coriander leaves for garnishing

For the tempering:

2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2-3 dried red chilies
Curry leaves


Instructions:

Marinate the chicken pieces with turmeric powder, half of the red chili powder, half of the coriander powder, half of the ginger-garlic paste, and salt. Let it marinate for at least 30 minutes.


Heat oil in a pan or kadhai over medium heat. Add the marinated chicken pieces and fry until they turn golden brown. Remove the chicken from the pan and set it aside.


In the same pan, add a little more oil if needed. Add the mustard seeds and cumin seeds for tempering. Once they start to splutter, add the dried red chilies and curry leaves.


Add the finely chopped onions to the pan and sauté until they turn translucent.


Add the remaining ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw smell disappears.


Add the chopped tomatoes and cook until they turn mushy.


Now, add the remaining red chili powder, coriander powder, and cumin powder. Mix well and cook for a few minutes until the oil starts to separate from the masala.


Add the fried chicken pieces back to the pan and mix well with the masala.


Pour in enough water to cover the chicken pieces and bring it to a boil. Then, reduce the heat, cover the pan, and let it simmer until the chicken is cooked through and the gravy thickens to your desired consistency.


Finally, sprinkle garam masala over the curry and give it a quick stir.


Garnish with freshly chopped coriander leaves.


Serve hot with steamed rice or your favorite bread.
