Quick and Flavorful Tava Pulav Recipe

Ingredients:

1 cup basmati rice
1 cup mixed vegetables (peas, carrots, bell peppers, corn, etc.)
1 large onion, finely chopped
2 tomatoes, finely chopped
1/2 cup boiled and mashed potatoes
1/4 cup chopped coriander leaves (cilantro)
1/4 cup mint leaves, chopped
1/4 cup paneer cubes (optional)
2 tablespoons butter or ghee
1 tablespoon oil
1 teaspoon cumin seeds
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon pav bhaji masala (optional)
Salt to taste
Lemon wedges for garnish


Instructions:

Cook Basmati Rice:

Rinse 1 cup of basmati rice in cold water until the water runs clear.

Cook the rice in 2 cups of water until it's fluffy and each grain is separate. Set aside.


Prepare Vegetables:

Chop a mix of vegetables such as peas, carrots, bell peppers, and corn.

Boil and mash potatoes.


Sauté Aromatics:

Heat 1 tablespoon of oil in a large tava or flat pan.

Add 1 teaspoon of cumin seeds and let them splutter.

Add finely chopped onions and sauté until they turn golden brown.


Add Vegetables and Spices:

Add the chopped tomatoes and cook until they are soft.

Stir in 1 teaspoon of ginger-garlic paste and cook for an additional minute.
