For the Kofta Curry:

2 tablespoons oil
1 large onion, finely chopped
2 tomatoes, pureed
1 tablespoon ginger-garlic paste
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
Salt to taste
1 cup water
Fresh cream for garnish (optional)
Fresh coriander leaves, chopped (for garnish)

Instructions:

Making the Paneer Kofta:

In a large mixing bowl, combine grated paneer, besan, corn flour, red chili powder, garam masala, and salt.

Knead the mixture into a smooth dough. If the dough is too soft, add more besan.

Divide the dough into equal portions and flatten each portion in your palm.

Place a small amount of chopped cashews, raisins, and coriander leaves in the center of each flattened portion.

Seal the edges and shape the mixture into round koftas, ensuring the filling is enclosed.

Frying the Paneer Kofta:

Heat oil in a deep pan for frying over medium heat.

Deep-fry the paneer koftas until they turn golden brown and crisp. Remove and drain excess oil on a paper towel.

Preparing the Kofta Curry:

In a separate pan, heat oil over medium heat. Add finely chopped onions and sauté until golden brown.

Add ginger-garlic paste and cook for a minute until the raw aroma disappears.

Pour in the tomato puree and cook until the oil separates from the mixture.

Add cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well.

Pour in water and bring the mixture to a simmer.

Assembling the Dish:

Gently place the fried paneer koftas into the simmering curry.

Allow the koftas to soak in the flavors of the curry for 5-7 minutes.

Garnish with fresh cream (if using) and chopped coriander leaves.
