1 cup yogurt
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste

For Nawabi Handi Masala:

3 tablespoons ghee (clarified butter)
2 large onions, finely sliced
1 cup tomatoes, pureed
1/2 cup cashew nuts, soaked in warm water
1/4 cup melon seeds (magaz)
1/4 cup desiccated coconut
1 tablespoon poppy seeds (khus khus)
1 tablespoon fennel seeds
1 tablespoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
1 teaspoon cardamom powder
1 teaspoon kasuri methi (dried fenugreek leaves)
Salt to taste

For Assembling:

1/4 cup fresh cream
Chopped coriander leaves for garnish
Saffron strands soaked in warm milk (optional)

Instructions:

Marinating the Meat:

In a large bowl, combine the chicken or mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.

Mix well, ensuring the meat is evenly coated. Allow it to marinate for at least 1-2 hours, or preferably overnight for enhanced flavors.

Making Nawabi Handi Masala:

In a blender, combine soaked cashew nuts, melon seeds, desiccated coconut, poppy seeds, and fennel seeds. Blend into a smooth paste, adding water if necessary.

Heat ghee in a handi or deep pan over medium heat. Add sliced onions and sauté until golden brown.

Add the tomato puree and cook until the oil separates from the mixture.

Add the blended masala paste and continue cooking until it thickens and releases fragrant aromas.

Stir in coriander powder, cumin powder, garam masala, cardamom powder, kasuri methi, and salt. Mix well.

Cooking the Marinated Meat:

Add the marinated meat to the masala mixture, ensuring it is well-coated.

Cover and cook on low heat until the meat is tender and the flavors are absorbed, stirring occasionally.

Once the meat is cooked, add fresh cream and mix well. Adjust the seasoning according to taste.

Assembling the Dish:

Garnish the Nawabi Handi with chopped coriander leaves.

For an extra touch of luxury, drizzle saffron-infused milk over the dish.

Serve hot with naan, roti, or steamed basmati rice.
