SOURCE

Ingredients:

1 cup yellow lentils (toor dal)
1/4 cup split yellow lentils (moong dal)
1 large onion, finely chopped
2 tomatoes, finely chopped
1 green chili, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 tablespoon coriander powder
1/2 teaspoon garam masala
2 tablespoons ghee (clarified butter) or oil
Salt to taste
Fresh coriander leaves for garnish

Instructions:

Prepare the Lentils:

Rinse the toor dal and moong dal under running water until the water runs clear.
Cook the lentils in a pressure cooker with sufficient water until they are soft and mushy.

Temper the Spices:

In a separate pan, heat ghee or oil. Add cumin seeds and mustard seeds.
Once the seeds splutter, add finely chopped onions and green chili. Sauté until the onions turn golden brown.

Add Aromatics:

Add ginger-garlic paste to the pan and sauté until the raw aroma disappears.
Introduce finely chopped tomatoes and cook until they are soft and the oil starts separating.

Spice it Up:

Stir in turmeric powder, red chili powder, coriander powder, and salt. Cook the masala until it releases a rich aroma.

Combine with Lentils:

Add the cooked lentils to the spice mixture. Adjust the consistency by adding water if needed.

Simmer and Infuse Flavors:

Allow the Dal Tadka to simmer on low heat, allowing the flavors to meld together. Adjust salt and spice levels according to your taste.

Finish with Garam Masala:

Sprinkle garam masala over the dal and give it a final stir.

Prepare the Tadka:

In a small pan, heat a tablespoon of ghee. Add a pinch of cumin seeds and let them sizzle.
Pour this tadka over the prepared dal, infusing it with a burst of aromatic flavors.

Garnish and Serve:

Garnish with fresh coriander leaves, adding a touch of freshness and color.
Serve hot Dal Tadka with steamed rice or Indian bread like roti or naan.

Dal Tadka, with its aromatic tempering and comforting lentil base, is a delightful addition to any meal. This recipe's simplicity makes it perfect for both weeknight dinners and special occasions. Enjoy the warmth and richness of homemade Dal Tadka as you savor each flavorful spoonful.
