Ingredients:
For the BBQ Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce (store-bought or homemade)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
For the Crisp Onions:
- 2 large onions, thinly sliced
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Vegetable oil for frying
- Salt to taste
Instructions:
Prepare the BBQ Chicken:
Marinate the Chicken:
In a bowl, mix barbecue sauce, olive oil, minced garlic, smoked paprika, salt, and black pepper.
Place the chicken breasts in a resealable plastic bag or shallow dish, and pour half of the barbecue marinade over them. Reserve the remaining marinade for basting.
Marinate and Grill:
Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 1 hour.
Preheat the grill to medium-high heat. Grill the chicken for about 6-8 minutes per side, basting with the reserved marinade, until fully cooked and with beautiful grill marks.
Prepare the Crisp Onions:
Soak the Onions:
Place the thinly sliced onions in a bowl and pour buttermilk over them. Let them soak for about 30 minutes.
Coat and Fry:
In a separate bowl, mix flour, garlic powder, onion powder, paprika, and a pinch of salt.
Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C).
Dredge the soaked onions in the flour mixture, ensuring they are well-coated, and then fry them in batches until golden brown and crispy. Drain on paper towels.
Serve and Enjoy:
Assemble the Dish:
Place the grilled BBQ chicken on a serving platter.
Top the chicken with a generous portion of crisp onions, creating a flavorful and crunchy layer.
Garnish and Serve:
Garnish the dish with additional barbecue sauce or fresh herbs if desired.
Serve the Chicken BBQ with Crisp Onion alongside your favorite sides, such as coleslaw or grilled vegetables.
