Kadhi Recipe: Classic Punjabi Kadhi

1 cup sour yogurt (curd)

3 tablespoons chickpea flour (besan)

3 cups water

2 tablespoons ghee or oil

1 teaspoon cumin seeds

1/2 teaspoon mustard seeds

1/2 teaspoon fenugreek seeds (methi seeds)

A pinch of asafoetida (hing)

1-2 dried red chilies

Curry leaves

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder



For the Garnish: Chopped fresh coriander leaves

Instructions:

In a mixing bowl, whisk the yogurt and chickpea flour together until smooth, ensuring no lumps remain.


Gradually add water to the yogurt mixture, stirring well to combine. This will form the base of the kadhi.


Heat the yogurt mixture in a large pot over medium heat, stirring constantly. Add salt and the spice mix (turmeric powder, red chili powder, coriander powder).
